| Villalba
cites his own life story as an example of the American
opportunities and freedoms they defend. He emigrated
as a teenager from Colombia, put himself through college
and enjoyed a successful engineering career before retiring
to fulfill a lifelong dream of owning a restaurant.
He and wife Bunny, head chef of the restaurant, catered
for over nine years since moving to the area 14 years
ago.
Bunny Villalba learned gourmet cooking at a young age
by the side of her Brooklyn-born mother and Russian
father who had a restaurant in Puerto Rico. A Spanish
and English as a Second Language instructor, Bunny was
born overseas, and lived in several Central and South
American countries, before coming home to America as
a teen.
With its unique international menu that breaks the mold
of everyday restaurant food, Roberto's offers an eclectic
menu with offerings from Russian, Spanish, Latin American,
Caribbean, Eastern and Western Europe, Mediterranean
and American palates.
One diners' favorite is beetkees, a savory Salisbury
style beef patty in a portobello, shitake gravy. Also
popular are the restaurant's paellas with chicken, pork,
chorizo sausage, shrimp, clams, or eggplant , white
beans, artichokes, peppers and a seafood mixture of
shrimp, scallops, clams, and mussels. |
